Vinification

Handpicked and destemmed into small fermentation vats. Hand plunged twice daily and macerated a full 31 days until tannin development was considered optimal for maturation. Attention given to supple, elegant textures and tannins. Once the wine had been run off its skins at the end of the fermentation, it was put through a full malolactic fermentation in oak barrels to fully bring out the finesse and expressiveness of the aromas. The aging process, which lasted approximately 22 months, then began and took place in 128 litre French oak barriques, very few new. Bottled in lightweight glass without fining, filtering or any preservatives.
