Lightly hazy (unfiltered), medium crimson, even colour throughout. The nose is enticing, with raspberry, red cherry, young plum, rosehip, and sweet spice overlying mushroom, herb, earth and mealy nuances. Medium-bodied, aromas of red fruit melded with rosehip, forming a taut core, unveiling vanilla, cinnamon, pepper, mushroom, earthy/ ashy elements and a hint of game. The wine shows concentration and tautness with tightly bounded tannins throughout the palate, drawing a long line and elegantly expressed, reflecting its origin, the limestone slope it grew on. The refined layers carry a lengthy, chalky finish. Match with smoked duck breast and mushroom risotto over the next 8 years. Fermented to 12.4% alc, unfined and unfiltered, zero added sulphites. Vinification

Handpicked and destemmed into small fermentation vats. Hand plunged twice daily and macerated a full 31 days until tannin development was considered optimal for maturation. Attention given to supple, elegant textures and tannins. Once the wine had been run off its skins at the end of the fermentation, it was put through a full malolactic fermentation in oak barrels to fully bring out the finesse and expressiveness of the aromas. The aging process, which lasted approximately 22 months, then began and took place in 128 litre French oak barriques, very few new. Bottled in lightweight glass without fining, filtering or any preservatives. This wine comprises a very small barrel selection of the Abel clone.
